Hello.. This is not a recipe. It is a tip that i have found works great when you are making roasted chicken or turkey or any type of bird.
When you put the seasoning on the bird, take the skin from around the neck area over the breast and gently separate the skin from the meat to make a small pouch over each breast with your fingers. You can then insert a portion of your seasoning into these pouches; This way when the bird is cooking the meat is getting the seasoning. It will be a lot moister when done cooking and have more flavor.
Had this tip given to me an it makes sense.. skin is supposed to keep things out. if you put the seasoning on the skin it does not season the meat it stays on the skin.[/U]
