These are to die for! I've served them as an appetizer, but with large mushrooms, they are filling enough to be a main course. They have been the hit of every party I've taken them to. THAY ARE SO GOOD! And easy.
Prep time: 15 minutes
Cook time: 15 minutes
Serves 6
Ingredients:
12 large mushrooms
6 oz. mild or hot sausage
3 tablespoons seasoned bread crumbs
1/2 cup shredded mozzarella cheese
2 tablespoons dried parsley
1. Preheat the oven to 375*F. Grease a large baking sheet. Remove and chop mushroom stems, reserving the cap. (cuz your gonna stuff it)
2. Heat a medium skillet over medium-high heat; add sausage. Cook until browned and crumbly, about 5 minutes; drain and stir mushrooms stems, crumbs, and 1/4 cup mozzarella (keep the rest for later) into the skillet.
3. Remove the skillet from heat. Spoon sausage mixture into the mushroom caps. Arrange stuffed mushrooms on prepared baking sheet.
4. Top the mushrooms with the remaining mozzarella. Bake until stuffing is hot, about 15 minutes*. Place on a platter. Garnish with parsley.
* You can also save time by microwaving the stuffed mushrooms. Takes about 5 minutes in the microwave.
** For extra cheese flavor, add 3 tablespoons grated parmesan cheese to bread crumbs in step 2.
